This delicious recipe is easy to prepare and perfect as a lazy lunch or light dinner. This recipe yields 2 servings.
- ½ cucumber
- 30g Feta
- 200g tub Marinated olives with sundried tomato
- 250g pack Courgetti noodles or Rice noodles
- Use a mandoline and slice the cucumber into thin ribbons diagonally.
- Place in medium mixing bowl.
- Crumble in feta.
- Add olive oil and seasoning to taste.
- Toss and serve.
