[Recipe] Whole-wheat pretzels

This delicious recipe is low in sodium and easy to make. These delicious pretzels are about 182 Calories each and makes 12 servings.

Ingredients:

  • 12g Dry yeast
  • 2 tsp Brown sugar
  • 1/2 tsp Salt
  • 1 1/2 cups Warm water
  • 1 cup Bread flour
  • 3 cups Whole-wheat flour
  • 1 tbsp Olive oil
  • 1/2 cup Wheat gluten
  • Cooking spray
  • 1/4 cup Baking soda
  • 1 Egg white or 1/4 cup egg-substitute

Method:

  1. In a food processor, add the yeast, salt and warm water. Let it sit for about 5 minutes.
  2. Then add the flour, olive oil and gluten mix. Mix with the dough hook for 5-10 minutes. Dough should be smooth and should pull away from the bowl.
  3. Lightly oil a large bowl and add the dough. Cover with cling film an rest for 1 hour in a warm place.
  4. When the dough has doubled in size, punch the dough down and divide into 12 equal pieces
  5. Roll the pieces into long ropes.
  6. Then start forming your pretzels, one at a time.
  7. Make a u shape with one single rope. Cross the ends over each other and pinch them at the bottom of the u-shape. Repeat this process until all 12 pretzels are formed and properly pinched.
  8. Preheat the oven to 230 degrees Celsius.
  9. Prepare one or two baking trays with baking parchment.
  10. In a large pot, bring about 10 cups of water and 1/4 cup baking soda to the boil.
  11. Add pretzels, one by one, and cook for about 30 seconds.
  12. Remove pretzels and place on prepared baking tray.
  13. Brush pretzels with egg white and bake for 10-15 minutes until dark brown.
  14. Serve and enjoy!
